I could easily eat this everyday for lunch….so yummy and simple to make.
- 1 cup grape tomatoes (halved)
- 1 cup cucumber (slices)
- 2 Tbsp red onion (chopped)
- 1/2 cup chickpeas
- 1/2 – 1 can of flaked white tuna (drained)
- 2 Tbsp feta cheese
- 1 Tbsp avocado oil
- 2 Tbsp balsamic vinegar
- Place tomatoes, cucumber, red onion and chickpeas in a bowl.
- Top with tuna and feta cheese.
- Drizzle with oil & vinegar.
