These Simple Breakfast Cookies are a total GAME CHANGER – perfect for those crazy mornings – and to change it up – simply switch out the cranberries with another dried fruit and the seeds with another or some raw nuts.
Ingredients
- 2 ripe bananas (mashed)

1/3 cup natural peanut butter (warmed)

1/4 cup honey

2 eggs
-
2 cups large flake oats

1/4 cup ground flax

1/2 cup dried cranberries
-
1/2 cup pumpkin seeds

1 tsp cinnamon

pinch of himalayan salt

1/4 cup mini chocolate chips
Directions
- Preheat oven to 350 degrees.
- Line a baking sheet with parchment paper.

In a large bowl mix together all of the ingredients until fully combined.

Spray the inside of a 1/3 measuring cup with non stick spray.

With prepared cup, scoop out mixture and place on prepared pan.

Flatten down with back of spoon.

Bake for about 15-20 minutes until edges are lightly browned.

Let cookies cool on baking sheet before moving to an airtight storage container.
