Mmmm a perfectly BALANCED meal, for anytime of the day.
- 1 hard boiled egg, chopped
- 2 hard boiled egg whites, chopped
- 1/3 -1/2 of an avocado
- spinach leaves
- grape tomatoes
- himalayan salt & black pepper to taste
- Place egg, egg whites and avocado in a bowl and mash with a fork until combined.
- Top whole grain bread (toasted) with spinach leaves.
- Top with avocado & egg mixture.
- Top with sliced tomatoes.
- Sprinkle with himalayan salt & pepper.
