Overstuffed Chicken & Broccoli Sweet Potato

Ingredients

  • 1 medium sized sweet potato (baked in skin)
  • 3 oz cooked grilled chicken breast (sliced)
  • 1/2 cup roasted broccoli
  • 2 Tbsp plain greek yogurt
  • 2 Tbsp green onion (chopped)
  • 1 Tbsp shredded cheese
  • himalayan salt & pepper

Directions

  • Slice hot potato down the middle, being sure to leave it intact.
  • With a fork mash the insides.
  • Top with chicken, broccoli, greek yogurt, chopped onion and cheese.
  • Sprinkle with salt & pepper.
