Ingredients
- 6 cups broccoli (chopped)
- 6 cups bagged coleslaw mix
- 1 cup shredded carrots
- 1 can chickpeas (drained & rinsed)
- 1/2 cup raisins
- 1 bunch green onions (chopped)
- 3/4 cup slivered almonds (toasted)
- 1/2 cup tahini
- 1 large lemon (juiced)
- 1/4 cup warm water (to thin dressing)
- 1 – 2 Tbsp pure maple syrup
- 2 tsp yellow curry powder
- 1/2 tsp ground ginger
- 2 tsp ground turmeric
- himalayan salt & black pepper (to taste)
Directions
- Place the broccoli, carrots, coleslaw, chickpeas, raisins, green onion and toasted almonds into a large bowl.
- Set aside.
- In a small bowl whisk together the remaining ingredients to make the dressing.
- Pour over salad mixture and stir to fully combine.
- Serve as a side with your favorite protein.
