Cucumber,Tomato & Red Onion Salad

Ingredients

  • 2 long cucumbers (thinly sliced)
  • 4 cups grape tomatoes (slice lengthwise in half)
  • 1/2 red onion (thinly slice)
  • 1/4 cup apple cider vinegar
  • 2 Tbsp extra-virgin olive oil
  • 2 tsp dijon mustard
  • 1 tsp honey
  • himalayan salt & black pepper (to taste)
  • 2 Tbsp dried dill

Directions

  • Place cucumbers, tomatoes & onion in a large bowl.
  • In a small bowl, whisk together the remaining ingredients until combined.
  • Pour mixture over salad.
  • Gently toss to coat.
  • Enjoy!
