Blondie Power Balls…. these will give you lasting energy to do all the things you love.
- 3/4 cup nut butter (peanut or almond)(softened)
- 1/2 cup raw honey
- 2 Tbs coconut oil (melted)
- 1 tsp pure vanilla extract
- 1-2 scoops vanilla protein powder
- 2/3 cup unsweetened shredded coconut
- 1/4 cup ground flax
- 2-1/2 cups large flake oats
- 1/4 cup raw cacao nibs
- Line a baking sheet with parchment paper.
- Mix together nut butter, honey, coconut oil & extract.
- Add in protein powder, coconut and the ground flax.
- Stir in oats and cacao nibs.
- Using a cookie scoop,scoop into balls.
- Place onto prepared pan.
- Transfer to a container with a lid.
- Store in the fridge or freezer.
Makes about 30 balls.
