Almond Meal Chocolate Chip Cookies

 

 

 

 

 

 

These cookies are a frequent request from my 10 year old and aim to please even the pickiest of eaters.

 

Ingredients

  • 1 1/4 cups almond meal (flour)
  • 1/2 cup hemp hearts
  • 3 Tbsp ground flax
  • 1/2 tsp baking powder
  • 1/4 tsp himalayan salt
  • 1/3 cup coconut sugar
  • 1 egg
  • 3 Tbsp coconut oil (melted)
  • 1/2 tsp pure vanilla extract
  • 1/3 cup mini chocolate chips

Directions

  • Preheat oven to 375 degrees.
  • Line a baking pan with parchment paper.
  • In a large mixing bowl, stir together almond meal, hemp hearts, ground flax, baking powder, salt and sugar.
  • In a separate bowl, whisk together egg , coconut oil and vanilla.
  • Add to the dry ingredients, along with the chocolate chips and mix until just combined.
  • Drop 1-inch balls, on prepared pan.
  • Press down slightly to flatten a bit.
  • Bake until edges begin to brown, about 7-10 minutes.
  • Remove from oven and allow cool.
